This is made in honor of the holidays, nostalgia, and in dear love and admiration for our Great Grandmother, who was an amazing cook, taught me how to make sugar Christmas cookies and she (for some crazy reason) loved fruit cake and brought it to every holiday meal we shared together. We get very (as in very) ripe bananas by the case and roast them for an hour (or so) in brown sugar, lemon juice and a dash of 1830 Sea Salt. We churn the bananas into our ice cream base and swirl in custom blended chocolate (which we use for our Cape Cod Pops) to create speckles of chocolate throughout. Simple, sweet, and so very good.
